Garbanzo beans that is. This quick fix recipe is one of the few useful things I picked up from all that fad low-carb dieting. But, the way they had it was pretty bland (as you can probably imagine), so I spiced it up. Easy Peasy Cheesy. Ohhh, cheesy. I wonder if I can add cheese to this.
Roasted Garbanzo Beans (aka Chickpeas)
What you’ll need:
* One 8oz can of garbanzo beans - $0.79
* A cookie sheet - anywhere from $1 - $20
* Two Tbsp Lemon Pepper - 5oz/$1
* An oven

How to do it:
Step 1:
Preheat the oven to 350° F.
Step 2:
Open up the can of beans and dump them on the un-greased cookie sheet (you may want to lay a layer of tin foil down first to save on clean up time). Spread the beans out so that they are in a single layer (rolling the side of the can over the beans gets this done fast).
Step 3:
Shake out 2 tbsp of lemon pepper or any seasoning of your choice to taste. Good alternatives are dill, oregano, or seasoned salt (if you like it extra salty). I like to use canned beans because they already come with salt from the canning process and I don’t have to worry about adding extra. Use the side of the can again to roll over the beans so that the seasoning gets evenly distributed.
Step 4:
Bake in the oven for one hour, or until the beans can rattle on the cookie sheet. You’re looking for the outside to be a little hard and the inside to still be a bit soft.
And there you have it. These store well in a container in the fridge and can last up to a week. Although they never stick around that long at my house. PR
